La Boulangerie Bistrot

The project is located inside a shopping mall and houses two different programs that can function in paralell: a bakery shop and a bistrot. The kitchen for the bistrot is located on the mezzanine. It is supported by an elevated steel structure that could only be fixed on the floor because of the restrictions of the local regulations. The existing floor levels  are where the bakery shop (ground floor) and the deposit (basement) are located. All the tables and chairs are located outside in the gallery of the common areas.

Normally, the black and white hexagonal mosaic tiles come together on flexible mesh sheets. In this project, right close to the entrance, these sheets were installed and then the tiles were removed partially only to be installed again by hand, mixing both colors. The resulting design follows the general guidelines defined by the architects and highlights the transition between the dark floor of the gallery and the bright surfaces of the internal floor and walls. The method of installation leaves space for imperfections and variations that are typical of the craft techniques that are also used in the bakery shop and the bistrot.
